2025 Prosecco

100% Prosecco, sourced from the Chalmers Family’s Merbein vineyard in the Murray Darling region of Victoria. Prosecco (also known as Glera), is a very old variety originating from Veneto in Italy where it is used to produce sparkling wines also called Prosecco. Destemmed fruit was basket pressed with full solids to tank for wild fermentation and maturation on lees for 9 months. The wine is then moved to a pressure tank where the bubbles are created via the Charmat method.

Sparkling and refreshing, it opens savoury with acacia, honeysuckle and a subtle toastiness, before bright yuzu and crisp Granny Smith apple kick in. A creamy mousse carries sage and grilled peach through the mid-palate. With no added sugar (zero dosage), it’s bone-dry yet balanced, finishing long, saline and moreish – built for antipasti, prosciutto and everything in between.
